Remember when you were on that fantastic holiday and you promised yourself that you would keep on eating just as you have been for the last 2 weeks? Well, if you’re anything like us then that promise to yourself is quickly forgotten as you land back home and raid the cupboard for familiar treats and snacks.
Shame on us but it’s what we all do (you know you do it too!)
So, to try and give ourselves a little taste of holiday we created this ever so simple dish. A staple in most restaurants it seems but when done well it can be a lovely treat and it is something that you can prepare without any fuss too.
- 1 large tomato (beef tomatoes are great if you can get them)
- 1 ball of buffalo mozzarella (only the soft type works, the harder type is for cooking with)
- 2 tsp pesto (you can make your own if you have time, we opted for a jar here)
- fresh basil leaves
- Olive oil
Important! The mozzarella MUST be at room temperature. If you take it straight from the fridge then it is tasteless.
Slice the tomato and mozzarella and lay alternatively on a plate. Mix the pesto with some olive oil to slacken it and drizzle over the layered tomato and mozzarella.
Sprinkle over the basil leaves and season with the salt and pepper.
