Really simple and quick mince pies. Perfect for those extra ‘surprise’ guests that come calling over the festive period.
- 1 jar sweet mince filling
- 4 sheets filo pastry
- 1 tsp melted butter
- icing sugar (for dusting)
Pre-heat the oven to 150 degrees.
Brush the melted butter into the muffin tin and cut the filo sheets into 5cm squares. Don’t be too accurate, as long as the square is bigger than the muffin shape in the tin.
Take 2 filo squares and lay on top of each other, turning 1 sheet 45 degrees (to make a rough star shape). Place the filo ‘stars’ into the muffin tin and fill with the sweet mince filling. It should take 1 heaped tea spoon to fill them enough.
Brush the tips of the ‘stars’ with the remaining melted butter.
Place in the oven and cook for 20 minutes until slightly coloured.
Leave to cool slightly and dust with icing sugar before serving.
